This is a real easy peasy feast for 2. Great if your carnivore friends are having a bar b cue as you can get them to do the halloumi on the griddle. If not just heat up the fry pan and brown the halloumi in that. It's quick , simple and ideal for a summer evening with a glass of what you fancy.
1, tin 3 bean salad, rinse well. 1, block of halloumi. Salad bits of your choosing. Tomatoes, cucumber, peppers, spring onions, grapes, fresh herbage...whatever. 2, cloves garlic crushed. Half a lemon. 2 dessert spoons olive oil for the salad.
Prepare the salad in a bowl, with the well rinsed beans, garlic, olive oil and the chopped up salad bits and squeeze the lemon half over the lot and stir about to marinade.
Cut the halloumi block into slices of your desired thickness and either bung on the bar b, or into a fry pan, turning once they have got a bit of colour.
Lay the halloumi on top of your carefully prepared salad and put in front of your partner and accept nothing less than an....oooo, that looks yummy....cos it is.
A bit of nice crusty bread or garlic bread could go with it but when I make it, it's got 4 cloves in and makes your eyes water.So more garlic would be OTT.
